- 4 cups fresh pineapple or 1 whole pineapple
- ¼ cup brown sugar
- ⅛ tsp salt
Instructions
Roasted Pineapple Puree (makes 1 cup):
- Preheat the oven to 350°F and prepare the baking sheet with parchment paper.
- Cut 1 pineapple into chunks and coat with brown sugar and salt.
- Lay out the pineapple in a single layer and put it into the oven for 15 minutes.
- Stir the pineapple and continue to bake until it starts to caramelize. About 20 more minutes.
- Remove from the oven and blend in a blender or use an immersion blender.
- Strain the puree through a fine mesh sieve.
Ice Cream:
- In the bowl mix the cream base and 1 cup of pineapple puree.
- Pour into the ice cream maker and churn. Churn until the mix starts to look solid and firm. It’s ready when a spoon is pressed across the top and it should leave an impression without collapsing for just a second.
