this end I'm gonna do is get a
little spatula and scrape the
rest. I'm not left handed, and
I'm doing it left hand and then
it's tricky for me. Okay,
finishing it up. I love seeing
these little bits that come up.
Because it's turning. Now that's
good.
We'll just let that go for
several minutes until it gets to
the perfect consistency where
you start to see a little bit of
texture and a little bit of
body. But we don't want too much
overrun because we want dense
ice cream. That's the vest. You
it's it can be tricky to watch
when that is. But the more you
do it, the more you kind of
start to see oh, that's when and
it kind of is at this point
where if you put your spoon or
spatula in there, and you kind
of scoop the ice cream a little
bit. The line should stay for
just a minute before before it
folds back in to the mix. You
could think about it almost in
the sense of soft and stiff
cream. When you're whipping
whipping cream. This would be
kind of a soft peak stage. I'm
going to show you this ice cream
how it's turning. It can be
tricky to see especially in this
one because this isn't the way
but if we kind of move things
about a little it's it's getting
there.
